PIZZA BASE
Ingredients
1kg plain unbleached flour
pinch salt
20ml good olive oil
10g dried yeast
lukewarm water
Method
Mix flour and salt together and turn out onto bench.
Put yeast, 2 tablespoons of flour and 1/4 cup of water in a small bowl.
Add oil, mix and leave to to sit for 30 minutes to prove.
Make a well in the flour mix, add the yeast mix and enough lukewarm water to make a ball of dough. Sit for 10 minutes to prove.
Break off small balls to roll out thin pizza bases.
Dough can be kept frozen for up to 2 months.
PIZZA SAUCE
Ingredients
4 x 800gm tins diced tomatoes
4tbspns tomato paste
100ml good olive oil
6 cloves garlic
mixed herbs to taste
Method
Place all ingredients in a heavy based pot.
Bring to the boil, then simmer for 3 hours, stirring occasionally.
PIZZA TOPPINGS
Bella - smoked salmon, rocket, red onion, capers, feta cheese
When cooked drizzle with sour cream and add a sprinkle of poppy seeds.
Mama - mozzarella cheese,baby spinach leaves, sliced mushrooms, sliced black olives, sun dried tomatoes.
Papa - mozzarella cheese, ham, chorizo sausage, baby spinach leaves, mushrooms, black olives.
